Because a long, long time ago Republicans were actually Elephants, and the same goes with Democrats, they were actually Donkeys. There was a war, between the elephants and donkeys, and it was truly epic and bloody. This fell into mythology, and the Americans took it upon themselves to use these symbols for their parties. It is similar to naming planets after greek gods.

The symbols were created by some newpaper many years back. The donkey represents the working people whereas the elephant represents the elite and powerful.

The donkey gained its acceptance as the Democratic symbol in 1874 as a result of Thomas Nast's cartoons in Harper's Weekly and Ignatius Donnelly's remark in the Minnesota Legislature, "The Democratic party is like a mule--without pride of ancestry or hope of posterity."
The elephant became known as a Republican symbol also because of a cartoon designed by Nast and published in Harper's Weekly (November 7, 1874.)

Democrat symbol is donkey because "they carry a load", Republican symbol is elephant because they "never forget" who the "jackass" is!
