It has been a long time since I lived in California...but any "soup kitchen" or homeless shelter would be good. Or collect clothing, toys, etc. for the homeless or even the teens in foster care who are about to be "let go" of the system. For these young people, it is a terrifying time of year, with no family and few friends, even just cards and small gifts of necessary items (shampoos, deodorant, soaps, stockings, underwear, socks, etc) would be a wonderful gift. Contact your local state agency for foster care for ideas.

As a resident of Mississippi, have your students do something to raise money for Hurricane Katrina relief. There are still people without homes: living in trailers, living with relatives, etc. And even a year later, materials are needed to rebuild Mississippi's Gulf Coast and New Orleans. If you can get out of the area, take a trip down south and help build a home.
