Look up Aaron Copland the composer. Several of his scores (Rodeo, Billy the Kid, Appalachian Spring) if played right would be exactly what I think you are looking for.

From a bluegrass point of view Foggy Mountain Breakdown, and Orange Blossom Special, and Dueling Banjos might also fit.

Actually while I am thinking about it... Erich Kunzel and the Cincinnati Pops did 2 separate albums/collections of Western themed music called Roundup and Roundup 2: Happy trails.

Back in the Saddle Again, La Cucaracha, Queen of the Desperados, and The Cowboy's Life...You might like the band, Asleep at the Wheel...they do Texas Swing music....ANd the New Pioneers...they do traditional western classics.....

I can't think of any without words excpet maybe the theme to Bonanza or Turkey in the Straw. Some with words are Happy Trails and Ring of Fire.

I am a vilionist/ fiddeler and if it's the misic you want, try the local music store. A few of my personal favorites are Devil's Dream, Fire on the Mountian, and Cotton Eye Joe. These are all very basic though If you want harder get a harder book
