"Processes" are parts of the Windows program itself. You started them running when you started Windows. They do slow your computer, but most of them are things you need to keep Windows running. If you were to shut down the wrong ones, you could crash your computer. Unless you know what the services are, it is recommended that you not turn them off. The amount of speed you would gain is normally very small. (Especially compared to the damage you could do turning them off).

Most processes that are running are necessary to keep your computer in working condition. For instance, smss.exe, csrss.exe, winlogon.exe, svchist.exe and others are crucial. If you are using Windows XP, it will also tell you the name of the user that started the process. If there is a process under your user name, it is possible to end it without crashing the system by pressing "end process" at the bottom of Task Manager. However, this is not recommended. If you want to disable processes from running in the background, go to the particular process's program and see if there is a setting which disables it from running automatically.
