A sexual assault could just be simply touching inappropriately; without going through the whole act. Raping is penetration.

Sexual assault is ANY type of forceful sexual harassment or activity brought on by intimidation, fear, alcohol, etc.... it's non-consensual.
Rape is specific whereas sexual assault is the general term that rape may fall under. I'm sure you know what rape is... it's a TYPE of sexual assault.

sexual assault can be anything from pinching someones bum to physically attacking them in a sexual way. Rape is penetration - therefore attempted rape is a sexual assault.

Sexual assualt is any thing done to anyone that is innappropriate in a sexual manner, excluding penetration. Rape is forced intercourse on a person, which does include penetration. Rape is a form of sexual assault.

Just to add one of the clauses everyone else has missed. Sexuall assault is when you have consentuall sex with minor aged 14-15 and Statutory rape is when they are 13 or younger,

Technically the definition of rape is penetration of the vagina or anus with the penis where consent was not given.
Other forms of sexual assault can be any sexual contact to which consent was not given which falls short of actual rape (e.g. groping, digital penetration, forced oral sex, etc) OR intercourse where the victim actually did consent, but the law does not recognise their ability to do so (e.g. they were under the age of consent).

Sexual Assault is when someone attacks you and touches your body and attempts to have sex with you but does not. Rape is when someone has sexual intercourse with you against your will and without your permission. For it to be classed as rape. your attacker has to actually penetrate your vagina and have complete sex.
