I like the "I Am Sam" soundtrack which covers Beatles songs.
I usually also like the soundtracks to any Cameron Crowe movie: Vanilla Sky, Almost Famous, Jerry Maguire, etc.

Depends on what you are going for. There are few soundtracks I really like as a whole, but plenty of individual tracks I love.

Forest Gump -- hands down.
No other soundtracks has that many hits spanned over that many generations. It's a classic made up of classics.
