Christopher Lee has been in the 3 LORD OF THE RING movies.
He has also been in 7 Hammer House of Horror movies playing the role of Dracula. in most it is the same Dracula.
Mr Lee has also played the part of Dr Fu Manchu in at least 5 movies.

I think Harrison Ford was also in a trilogy of Tom Clancy movies as the same character.
Verne Troyer was in both Austin Powers and Harry Potter movies
Warwick Davis was in both the first and the second trilogy of Star Wars movies and he was in Harry Potter movies.
Orlando Bloom was in the Lord of the Rings and the Pirates of the Carribean Trilogys (or will be when the third is released).

Hmmm...
Christopher Lee was in Lord of the Rings and Star Wars...(but not in the 3rd Rings movie..) So that's 2 technically.
Hugo Weaving was in Lord of the Rings and Matrix. That's two.
Perhaps Stan Lee if you count cameos in the Marvel movies?
