It really isn't a matter of trust. Honest people make errors all the time and most of us count our money even when it comes from the ATM machine and we know it is not trying to cheat us. I once stopped at a service station for gas and went inside after I filled my tank and picked up a quart of oil and some snacks. I gave the guy a fifty and he handed me change but I did not count it. I was pulled over by the local sheriff five miles later for leaving without paying for my gas. I paid but the clerk only charged me for the other items. When he saw me drive off he didn't recognize me and called police. It was straightened out when I went back with the cop because the guy did remember the oil and snacks and the fifty. I assumed I was paying for everything and had I counted my change I would have known he didn't. I always count my change now.

Could just be a force of habit, I know I count money a lot, mainly because I want to know in my head how much I actual have to spend. Not a trust thing with me more a mental thing for myself

I was taught never to count money in front of other people. I always double check, doesn't matter who it's from. It's not because I don't think they're honest, sometimes people just miscount. It was rude of them to count it in front of you though.

Let them count it, and don't be insulted! You should always count money, because people are always making honest mistakes with banknotes. Sometimes it can be embarrassing, it would polite for you to say something like, "please count it just to make sure I counted correctly." when you give them money.
