I don't know if you saw Planet Earth recently, in one episode the camera men had a problem with a Polar bear hanging round the camp and they tried all kinds of things to scare him off (firing blanks etc) eventually the shot a couple of signal flares near him and he decided to shuffle off. These guys don't scare easily. If one is coming to attack pray to goodness you have a powerful gun and aim for the chest region not the head (the front of the skull is incredibly thick to allow it to break the ice by headbutting it so that is can then get at the seals underneath. A bullet shot at the head is liable to ricochet off the skull and just annoy the bear).
Having said that not as many people have been killed by Polar bears as you might be led to expect and in those cases the bears were either provoked or malnourished. Polar bears have been seen off by little old ladies whacking them with a broom (probably not advisable) and guys shouting and banging tin lids together. Check out this site for more facts:

I don't think that people usually just sit there and think "Oh, I'd better leave that animal alone because there aren't that many of them left" when said animal is attacking the person's friend. People are very protective of their loved ones in times of danger, and that's just as natural as a hungry polar bear trying to eat them. It's not something he would've had time to think about. What would be selfish is if he'd just run away and let the bear kill his friend, and then someone else would kill the bear anyway for having killed a human. Then the bear and the friend would both be dead.

well, first thing to do is not go where there are polar bears. If i were you, i'd go to the carribean. It's warmer there and no polar bears. I can't think of one single reason to go to cold desolate places where you will find polarbears and penguins.

I think the harsh reality is, get eaten. Given they weigh 3 times as much and arent going to give up you just wouldnt stand a chance unless you have a gun.

Spread you're arms and legs out as far as possible to make your self as big as you can. This intimidates the bear and it should go away.
You can also play dead - although this is sometimes risky as they can sense fear it can also be very effective.
