I think it's where you use the letters of a word to spell out another word. In Silence of the Lambs, Hannibal Lecter told the police the killer's name was "Louis Friend", which turned out to be an anagram of "Iron Sulfide" aka "Fool's Gold". In Harry Potter and the Chamber of Secrets, Voldemort's real name was Tom Marvolo Riddle" which, when rearranged, spells "I Am Lord Voldemort".
Hope this helps...

Basically, it's rearranging the letters to form new words...

An anagram (Greek ana- = "back" or "again", and graphein = "to write") is a type of word play, the result of rearranging the letters of a word or phrase to produce other words, using all the original letters exactly once. Anagrams are often expressed in the form of an equation, with the equals symbol (=) separating the original subject and the resulting anagram. ‘Earth = heart’ is an example of a simple anagram expressed in that way.
