Because that is the way we have set up our numbering system. If we have only on object, we call that one (1).
If we aquire 1 more such object, we give that the name two (2).
Thus 1+1=2. Its the definition of our system.

You have one rupee & someone gives you one more one rupee.Then you have 2 rupees.Hence 1+1=2...
