If you are looking for eel (the only sushi I love) You need to try, "Maki Sushi" in Encino. I love the way they put a big chuck of eel with Avocado.
If you are looking for expensive and a chance to see celebrity, you need to go to Koi.

Sushi Moon is a great sushi place at Santa Monica and Highland. If the chef Yuki is there...you are going to be in heaven.

For buffet, it's Todai. For regular sushi, it's Kabuki. For ramen, maybe it's Mr Ramen.

I like Matsuhisa on La Cienega in Beverly Hills...it can get pricey, though.
