You cannot - it will always be possible to see the presence of the partition by examining the disk at a sector level, even if the windows explorer shows no drive letter associated with the partition. The best you can do, in order to protect the confidentiality of the data on the partition, is to encrypt its contents, with something like TrueCrypt.
