I think something you'll find both interesting, easy to understand and easy to get done is a project on Alfred Wegner's Theory of "Continental Drift" and more importantly what it has developed into today.
A section on how he discovered this would be very intriguing but not difficult. You could include glacial examples, where similar mountain ranges occur, how the continents fit together and where similar plant life/fossils have been found.
Good luck with whatever you end up doing!

Tornado. Create one by connecting 2 plastic soda bottles (the large kind) together at their tops with one of them full of water. When you turn it over, you'll see a pretty cool tornado like whirlpool as the water flows into the empty bottle. Very simple and quick. You can easily find tons of info to write on the formation and effects tornados have to accompany your cool project.
