"mad as a Hatter" came from the fact the hat makers used mercury in their profession. Mercury is a neurotoxin and many hatters became "mad" / insane from this.

the mad Hatter is from Alice in Wonderland: by Lewis Carroll, a known fact he was on acid/lsd when he wrote it, said it came to him in a "dream".

There was a common ailment that hat-makers got centuries ago, due to a chemical or a certain substance that they used to make hats.
It was toxic, and affected their brains. No joke.
