In "real" life, i.e. the body, hydrolysis is the main "digestion" reaction that changes disaccharides and polysaccharides to usable monosaccharides; in the digestion of proteins it is the reaction that breaks apart protein chains into amino acids; it is the reaction that breaks apart fats into fatty acids and glycerol.
