There are very few PERFECT rhymes for "pudding" if pronounced in its formally correct way, and two of them are SURNAMES: Gooding, Wooding. But I doubt names is what you are after. The one that I know is 'just an ordinary word' is the verb form "hooding", which may be of limitd use.
(Note: those who have listed these words before just plugged in the word "pudding" at rhymezone.com, and copied what they saw, without checking the word links to see that these words are NAMES. Rhymezone does not capitalize any of its words, so you have to check that way. Also, I believe they use a different color the links when they are names than when they are simple words -- a lighter blue, I believe.)
Also, words like 'budding' or 'flooding' don't quite word as perfect rhymes, because the VOWEL sound in the first syllable is different.
And while rhyming a two-word phrase with a single word is perfectly fine so long as the overall accent and sounds match, the type of examples suggested so far don't seem to work that way. If there were a word "shoulding" (pronounced /shooding/) that would be OK, but the accent of the expression "should ding" is not quite the same.
One alternative is to try to rhyme with the more slang form "puddin'". For that you can use "wooden".
The other route to go is to seek a "NEAR rhyme" in which most of the sounds from the accented vowel match or ALMOST match, esp. the vowel sounds and the final consonant or consonant cluster (called "full assonance" and "final consonance". How well any given near rhyme will work depends on the specific context you are using it in. (Certain places in poems and certain types of poetry demand closer matching. Humorous verse, such as limericks, is often quite forgiving, even allowing some slight MISpronounciation.)
"FOOTING" is the best I can think, since in context this t is barely distinguishable from the d sound of pudding (at least in American English)
More distant - booking,brooking, cooking, looking, noodging, wooshing, swooshing, sqooshing (pronouncing the last three with the same vowel some as the u in puding, NOT with a long u)
If this is your approach, it is possible that "budding", etc., will work for you, though the fact that the vowel that differs is the accented one 0amd thus a more prominent sound in the word) makes it less than ideal. Another possibility along these lines is a word with a LONG u sound -- like brooding, booting, hooting, looting, shooting, tooting, uprooting
And as a near rhyme for "puddin'" try: couldn't, wouldn't, shouldn't
