To my knowledge they never told what Monica and Ross' middle names were. I know that Monica's initials were M.E.G. But what was the E for?
I know that Chandler's was Murial
Rachel's was Karen
and Joey was Joseph Francis.
and Phoebe didn't know her middle name.
I am just looking for anyone that knows Monica and Ross' middle names.

According to Wikipedia, Monica's middle name was never revealed. I thought that it was Elaine, but I guess I just made that up. Phoebe made up the middle name "Felula" for Monica one time, however.
Ross's middle name is Eustace, according to Answers.com

We don't yet know them all. Here's a few: Rachel's is Karen [1.11]. Joey's is Francis [7.11]. Chandler's is Muriel [8.05]. Monica's starts with E [2.21]. One person e-mailed saying it's Erika, but as far as I can tell, there is not episode that confirms that. Ursula's middle name is Pamela [7.14], and in that same episode Phoebe mentions that she doesn't know her middle name (although originally the writers speculated that it would be Rose). Other early speculation from the writers gave Ross the middle name Eustace. The Friends Trivia game also lists that as his middle name. But no episode actually confirms that, as far as I know. I believe it was in the script sometime in season 1, but that scene either didn't get filmed or didn't make through editing. In my view, unless it's revealed in an episode, it's not necessarily official (just like Phoebe's middle name of Rose got dropped before it was ever revealed). BTW she had to know her middle name because at her birthday party Ursula showed her a birth certificate with her name and birthdate on it.
Some people mistakenly believe that Monica's middle name is Velula, because Phoebe signed for a delivery as "Monica Velula Geller" in episode 307. However, Phoebe's statements around that make it clear she wasn't sure whether Monica had a middle name. She was just making it up.
Perconally I thought it was Emma as in the first name of Rachel's Baby. Of course sadistically I want it to be something like Euphemia. It should have come out at the wedding however.
