Is it because they just have extra fans attached so they don't overheat and kill the whole system?

The extra fans will add to the noise. So will the extra processors, and extra drives.

Plus, servers are usually working a lot harder than your average workstation, so you will hear drives spinning up more often (and the fans running to compensate for them.

As servers are loaded with extra power and resources they generate more heat and noise. Because of more heat, they are provided with extra fans.

Possibly because their are more fans inside the box. I have 5 with
the option of 2 more.

not only that they have redundant everything (power supplies, hard drives, ect) which all add to operational noise.
