You could consider the rear-most seats from a pre-2007 model Land Rover Defender (90 or 110 station wagon).
These were side-facing, and fold-up, but are in pairs so you couldn't easily get 3.
There were also some after-market upgrade seats available for the Defender, which also might suit. See a Land Rover magazine for specialist breakers or parts suppliers. It might be worth having a good look at a Defender first, to see how the seats are fitted and work out if it is possible to use them in your van.

If your van is reasonably modern you would need to fit seat belts of some sort (and mounted to a strong part of the vehicle) to meet legislation.

Bolt those seats down correctly facing forward not sideways. Imagine someone getting hurt in your van and suing your socks off! Forces in an accident can be imazing! Forces can tear seat belt anchors righ out of the body. You were thinking seat belts too weren't you? Unbuckled people in back can fly foward and kill people in the front seats
