The dead may return as vampires after they are buried to ward off them rice and other substances are thrown in the coffin. .
To make sure that the dead will not return as vampires, the burial has to take place in such a manner that it ensures a successful transition of the soul to the place where it is meant to go. Which means that the proper procedures have to be observed before, during and after the funeral. Especially if, according to the local belief, there is a risk that the deceased might become a vampire. Objects or substances such as rice, are used to ward off vampires may be put into the coffin. Supposing that the vampire has managed to leave its grave, there is still no reason to panic. For there is a large variety of objects and substances (rice etc.)that are thought to ward off vampires-.

It must be the old belief that the soul is reborn by being ingested by a pregnant woman in the form of a grain of rice or other seed.
In ancient Greek mystery cults men were not supposed to eat beans, for that reason. They might rob a soul of its opportunity to be reborn.
In welsh mythology Gwyon was reborn as Taliesin because Cerridwen in the shape of a black hen ate him as a grain of wheat.
So throwing rice at a coffin should give the soul plenty of prospective housing to choose from, and a better chance to escape any lurking demons.
That is if there is such a custom, and you didn't mix it up with weddings, where actually the same underlying belief applies.
