Jalapeno Pepper. Green or dark green colored hot pepper. Used extensively in Mexican cooking. Approximately 2.3 inches long and almost an inch wide. It was named Jalapeño (literally "from Jalapa") because it was supposedly cultivated in Jalapa in the State of Veracruz in Mexico. When it reaches maturity it turns red. Recommendation: Oven-baked catfish with natural orange juice and jalapenos.
