Here's the recipe I follow:
Defrost your turkey in the fridge for a couple of days before you want to roast it.
Preheat your oven to 500. Remove the neck and giblets from the cavity. Pat your turkey dry and place it in a roasting pan. Rub some butter over the skin and sprinkle some salt on it. Stuff the cavity with some salt and pepper, maybe a sliced lemon or apple. PUt it in the oven at 500 for 30 minutes. Open the oven and cover the turkey with foil. Turn the temp down to 350 and roast for another 2-2.5 hours, depending on the size of your turkey. If it's really huge (like over 18 pounds) it may need longer than that. Let the turkey sit for about 20 minutes once it comes out of the oven, before you carve it.
Good luck and have fun!

I am in the same boat! I have already put my turkey in the oven. It is 18 lbs. so I have to let it cook for about 4 1/2 hours. I have a butterball turkey and the giblets and the neck were in bags, just take them out of the turkey and throw them away. If yours are not in bags, just take them out by hand. I sprayed mine with a cooking spray all around it so the skin doesnt dry out. Bake it in a roasting pan, mine is a disposable one and place a sheet of aluminum foil over the turkey to keep the juices inside. Hope this helps!!
