Tipping in all industries follows the same general standard. 10% for poor service, 15% for good service and 20% (or more) for exceptional service.
With a helicopter pilot, if poor service amounts to a crash, I probably wouldn't tip at all! lol

If he does a good job..10 to 20% per person, so a $500 flight should be $50 to $100 tip.

Wait till the flight is over and give him what you feel appropriate. Id say if he is good tour guide and has a good since of humour then $50 would be cool gives him a chance to go out on a date or gas up the car.

the tip should be based a little bit on the ride and how helpful and efficient he is. about 10-15% should be fine.

I am a great believer in being generous for good service, I would therefore suggest a tip of 50 cents or if he shares any of his sandwiches with you perhaps a dollar. I am sure he would always remember you and your fiance after this sort of generous tip.
