maybe the papa kangaroo was a rolling stone and he couldnt name him so they just called them joeys....

That is just the name that was picked. You could also ask why are kangaroos called kangaroos, or people called people...same thing.
Interesting fact: A mother kangaroo can delay pregnancy (with a embryo inside of her) for up to 2 yrs until the first joey is weaned.
