Any fresh fruit or vegtable is fine. You probably won't be able to stop them from eating paper, but if they have plenty of food they shouldn't eat enough paper to cause a problem. I would choose fresh cucumbers over pickles, as they don't need all the salt and chemicals they contain. A small chunk of pickle, once a month, would be alright.

Too much green food will cause diarrhoea. If you feed your guinea pig human food, remember to avoid foods that are high in calories, sugary or contain too much fat. To help keep your guinea pig’s teeth healthy, you need to provide lots of hay and perhaps a gnawing block and safe twigs to chew, such as apple, hazel or willow.
You can also feed special treats from your garden such as fresh grass, parsley, dandelion, carrot, apple, kiwi, alfalfa sprouts, celery, broccoli, sprouts, cauliflower, kale, spinach, cabbage leaves, peas, swede, tomatoes and raspberries. They love carrots!! and it doesn't matter if they eat paper as long as they don't eat a full piece every day! They can eat pickles but not sour ones!
