when i'm sending an aussie cheque to the US can they cash it if i write US dollars on it? or do i write AUS dollars?

you have to put US Funds, there's a huge fee for that at your bank. Mine's like 20 dollars just to do it that way, if they accept money orders that's the best way, there's no extra charge, just the normal charge of doing the money order. Post Offices are the best for it.

Why not set up for Paypal, this way you can set up to exchange the funds to the current rate automatically. When sending a cheque internationally, there is a holding period to run a check on the cheque which costs $20 or more. As a buyer and seller, If i post or buy overseas, I go by Paypal only. This is Hassle free.

get an international money order (from yuour post office or your banking institution). And tell them that you need it for American Dollars.
