A king is checkmated with at least two opposing pieces in the correct position. It's true, a king can take a man, but only if that piece if right next to the king with no other protection.

The way a King can capture someone is if the other chess piece positions itself next to the King. For instance, say I used a rook to capture a pawn that was directly next to your King; after I captured the pawn, my rook would be in position for your king to capture my chess piece.
Or say you moved your king diagonally (sp) next to a piece that can't move diagonally...

The king can only move one space at a time.
So, if the king is check mated that means it cannot move out of the way without putting itself in check, or you cannot interpose a piece to break the check without putting the king in check or you cannot take the piece putting you in check without further putting yourself in check.
