Not much. Microsoft has added a host of new features to both versions of Windows XP, but nothing that appears to be absolutely compelling for business users. One of the new features called "Fast User Switching" allows to to run two separate logged in sessions at once. This allows a user to do everyday work such as e-mail using a non-privileged user account, and then run an Administrative session at the same time without rebooting or resorting to the "Run As" command. This also allows you to quickly log onto any users workstation and make administrative changes without logging them off. The remote assistance feature of XP can also help reduce support costs by allowing your Help Desk staff to interact with a user's PC over the network. XP's built in ZIP compression support can also save your company a lot of money in licensing fees if you are currently using a third party utility such as WinZIP.

In essence XP is essentially Windows 2003 Workstation.

It was designed to be a cross over platfrom from 9.X, there are slight kernel differences in the original version of XP but when service pack 2 came out it was a complete revamp of the OS.

The next desktop OS Vista will essentially be the Workstation version of Windows 2007, if they get 2007 out in time.

Windows XP uses 128 bit CGI interface with GUI
It also supports NTFS HDDs
Windows 2000 uses 64 bit SVGA interface with CGI
It extends only upto FAT32 HDDs

XP - GUI operating system with networking where as in
2000 - there is only GUI.

Xp came after 2K

2K has two versions that is, 2k server for server machinesand 2k professional for client machines(also additional things like mail server, business server etc)

So 2k series was designed to build an effective server client networking environment. Also 2k series was the first effective usage of NTFS file system in its best way. And also the first o.s able to read fat 16 fat 32 as well as ntfs file system. In this operating system was the concept of active direstory; a centrallized account database concept was first introduced.

Xp basically has only 2 versions ie professional and home edition (and additional ones like media centre editione etc) the first one is for providing a better working environment for client machines and as a more effective replacement for win 2k profesional.
Xp also has more effective service/thread handling, better graphics support, better user switching as well as computer maintainance options compared to 2k pro.
The home editions is for home machines not connected to network. thus it hs very little options.

from a networking perspective? probably none.
windows xp claims to be a further development
(but mostly in the cosmetics department, I think)...

Visual Aesthetics. It looks pertier! But it's more vulnerable in many ways.
