Green bean casserole
Sweet potato casserole
Mashed potatoes with lots of real butter
Broccoli cheese and rice casserole

Pretty much take anything that MIGHT be good for you, and add cheese and butter to it, and a can of cream of ______ soup, OR add brown sugar, Karo syrup, and butter to it, call it a casserole of some sort and it'll be a hit! :) I'm joking, but it could also be true.

Signed,
A Texan

UPDATE:
Oh, yeah, I forgot that some people don't have cornbread dressing/stuffing.
He would probably love that.

You could go for corn bread stuffing, grits or sweet potatoes as side dishes. Most Southerners enjoy these dishes.
