Appeal to his sense of smell, touch or taste.

You didn't mention if he had any restrictions on food. If not -- see if you can find out his favorite foods. Most people like chocolate! Some fresh fruits would be nice too. It is pretty easy to find a fruit basket or make one yourself.

As far as touch -- any clothing with a good feel to them would be nice -- a cashmire scarf, soft jeans, lined leather gloves, lined house shoes. Focus on soft, textured items.

Does he have a favorite cologne? You can also get him some air freshners, hand lotion. Avoid very strong scents. Keeping some coffee beans around can help cleanse the palate as far as smelling goes. He might appreciate some baking soda to get rid of smells that he doesn't like that may be hanging around.

You didn't mention how independent he is -- there are various products out there that he might benefit from that are made for deafblind folks. I will be listing one source -- there are more stores out there, this is just an example.

Something tactile like an extra soft hooker that vibrates and smells good, I would wrap her around him and then give him chocolate filled with booze.

I would prepare him a good meal and feed him. I would wheel him out into the sunshine and let him feel the warmth of the sun and hopefully a fresh breeze on his skin. I would hug him and hold his hand.

A very soft blanket and I would wrap it around his shoulders myself. Then I'd sit and just hold his hand.
