I have to unscramble letters and numbers when I click send while sending an email message.

Those codes are called "captchas". They are used to prevent automated processes, like spam bots, from abusing mail systems and sending out millions of unattended emails. The theory is that a human needs to be able to read and repeat the code in order to send a message whereas a program or a bot couldn't do it.

That is to identify you as a Human and not a Computer Software. Normally softwares scan for address and compile spams for ahuge list and sends them which takes less than a minute and which cannot be done by a human very quickly. So, to identify whether you are a human or a computer, you have to decipher that word cause computer software are not that intelligent to find out letters from a picture.
