Cut them back to about two to three inches of the new growth of last year. Mulch them so they don't freeze and when it starts warming up, don't forget to start uncovering them or they'll mildew. My dad always put the grass clipping over them or leaves. make sure it's dry.

Roses are pruned in winter and some are done in spring.Cant find the rose you said listed anywhere so i really cant say the proper way for that rose follow cowboydr and you cant go wrong.
