You can but will need to get a visa's for the countries you visit, I am in the same situation with the wife as she holds a SA passport.

Yes, but you will need a Schengen visa before entering the countries, apply for it at either the Italian or Czech Republic embassy/consulate.
Otherwise your travel agency can handle it for you.

There is something you can get called a 'shein' i think which is like a visa for the whole of europe and you can travel to any european countries you like for a whole year. That would cover Italy, but I'm not sure about czech republic.

yes, you can, as long as you fly with your own high speed jet plane, trasspass the borders of these countries, avoid the local air defense. yes, most propably you can.
