I like the kitchen answer...but seriously - when I go to a good restaurant I'm paying for the additional skills, experience and creativity which a good restaurant can offer. In the same way that if I want legal representation I pay a lawyer, if I want surgery I pay a surgeon, if I want to eat the finest food in the world in the best settings I pay extra for the skills, expertise and years and years of learning that have gone into putting a good restaurant together.
Now, in my experience a good restaurant must have
- Excellent food - ideally of the type you lack the imagination, skill or time to cook yourself
- Wonderful wine list, offering excellence and value, driven by an excellent sommelier who understands what to buy and where
- Superb service which makes you feel very welcome while not being over-fussy
I've never been to el Bulli sadly, but I have been to its spiritual brother the Fat Duck in Bray and frankly I was utterly disappointed. I was very excited beforehand about the "scientific" approach to cooking but it really left me cold - and I realised that one of the talents of a great chef is to source the very best ingredients, prepare them well, and then let them speak for themselves.
The best restaurant I have ever been to in this regard must be either Chez Bruce or La Trompette, both in London - the food is marvellous, the wine excellent and very good value for what it is, and the service is just perfect - not too fussy but very professional.
Of course - the best food in the world is a different question - and in my case it was certainly in mama's kitchen on a Sunday - but I don't think that's what you asked!
