Oddly enough, Indonesian food in Amsterdam is sensational. Must buy souvenir is still clogs.

The must try food is fries with mayonnaise. I couldn't believe how good this is.
As for souvenir, I'd get a tee-shirt. It's easy to pack, and won't get confiscated in US Customs like tulips or absinthe.

must buy souvenier... hooker magnet from Red Light...then you can say you bought yourself a hooker...( I know I'm a dork)
