Months without an R are the summer months. It has long been said to avoid oysters during these warmer months. There were two reasons: spawning and safety.
Oysters from the summer months were generally smaller and of lesser quality vs oysters in cooler waters. (Spawning)
Warmer waters encourage bacteria. (Safety)
This is not a total myth.

If the name of the month has an "R" in it, you're not supposed to eat oysters or clams or rabbit or whatever. Like January, February, March, April, September, October, November, December. The months not named, May, June, July, August don't have an "R" in the name, so it's okay to catch and eat them. I think the months with "R" has something to do with breeding, mating, spawning, or whatever.
