Because it is the beginning of something new. Sort of like your birthday. If you are twenty and tomorrow you will be twenty one you would want to celebrate. Why? It is the first you are of the legal age to drink alcohol. You are diffently going to celebrate and never forget that day!

They celebrate it because they like to party and to be thankful/ happy that the is a new year for them to live/ or renew themselves!
And why not bring the new year in with joy!
