It would have been too noticeable. They had to be inconspicuous, which would not have been the case if they rode in on giant eagles.

One of the most popular and recurring questions on many a Lord of the Rings message board, right up there with "Do Balrogs have Wings?" You don't think that Sauron couldn't have just sent his Nazgul on the Fell Beasts and zapped the Eagles out of the sky? They'd show up really clearly on the "Eye of Sauron" radar screen! No, it was important to be inconspicuous. Even the exclusion of the Great Elves such as Elrond and Glorfindel speak to the absolute necessity of a low profile. Plus, the Eagles serve only Manwe and give favor to Gandalf simply because he has helped them. Best not to put them in the way of certain death! That wouldn't be very nice!

Apparently, according to Tolkien, the Eagles were servants of a higher power, and were not going to interfere with the doings of Middle Earth until the situation had become dire.
If you want to look into the symbolism and meanings, I've read one interpretation of the Eagles representing America in World War II, coming into the action and turning the tide. It is only one interpretation though.
I'd suggest you read the books for more. :)

because mordor would have seen them. did you notice that they were hiding behind the rocks most of the way because the eye (mordor) was watching over the orc place.
