your eye color can change, but over years, not over hours or minutes.
What can change very fast is the size of your pupil and which that the size of the iris, the color part. This can change the perceived color, especially if your eyes are hazel. While pupil size is mainly dependent on light, it is also influenced by mood. But that should not result in a huge difference.
Colors of clothes you wear and of makeup also can change how intense you perceive your eye color.
I think it is, however, very unlikely that your eye color really changes from a solid blue to real hazel within a short time span. Or you are a medical miracle, and somebody would be delighted to write a research paper about you. If you could document the change by closeup photos of your eyes you could test if the change is real or slight and the rest based on the clothes/makeup you wear. By the way, a lot of people wear colored contact lenses for cosmetic reasons, not because there is something wrong with their eyes.

Jenn, I used to date a guy that one night he was over at my house and he had blue eyes before we started making out, and after about 10mins, I looked again and his eyes were green. during the relationship his eyes always changed colors depending upon his mood it seemed like.

It's likely that there is stress related trigger to the genetic expression of pigment in the eye. Eye pigment expression is controlled at multiple genetic loci in a pathway. Under normal conditions, all of the proteins that contribute to your normal eye pigment are working properly. But under particular stresses, which might be environmental in nature, the level of expression or the function of one protein might decrease. In this case, you still have other proteins that are working but the pigment expression has been destabilized, and in the case of a person with a hybrid allele for pigment, this can result in the appearance an alternative color. Thus the color change from blue to hazel and vice versa.

your eye's can change color. However it normally only happens when you're a child. Certain Vitamins and Minerals contribute to your eyes vivid color. I'm not sure it's normal though. It might be a sign of a depleted vitamin levels.
