You can whip up quesadillas with the leftover meat. I like to use a little bacon, some cheese, diced tomatos, onions and red or yellow bell pepper. Put a pat of butter in a fry pan over medium heat. Place one flour tortilla in pan. Load on your ingredients. Place another flour tortilla on top. I like to butter the top beforehand. Put a dinner plate over the pan, invert, the quesadilla is now on the plate, slide the quesadilla back into pan, uncooked side down. You just want to brown them lightly. Use the plate again to remove from pan, cut into triangles, enjoy with sour cream or ranch dressing.

What my family always does is we make a lot of Turkey sandwiches for the next week or so. Last year we tried something new - we made Turkey & Noodles (instead of chicken & noodles). Basically, go to the store & get two packages of Reams Egg Noodles, put it in a big pot with either leftover turkey juice (not recommended) or buy some chicken broth by the can. Toss in the turney and basically cook until everything is hot & cooked & yummy. Serve over Mashed Potatoes. Do NOT make the turkey & noodles too brothy - it is not supposed to be soup - try to keep it thick, like stew.

It turns out yummy & you can heat it up for later if you make too much. ^^

That & sandwiches are good.

Turkey pot pie is extremely easy to do. Toss in some frozen vegetables with the meat. Add some gravy - even canned gravy works and top with some biscuit dough.
Something else we've enjoyed is spaghetti with either alfredo or tomato sauce. The ravoli someone mentioned sounds really good.
My absolute favorite left over is the leftover turkey sandwich with mayo and whole berry cranberry sauce. Add chips and a soda. I love the left overs more than the original meal!

Due to the nature of the meat (dry) I used to like it in a warm potato salad... Just the usual: new potatoes, high quality egg mayo, olive oil, mint, squeeze of lemon juice, cubed roasted turkey, perhaps some capsicum/peas/corn. Yum! Damn... now I feel like a potato salad.

wow let me tell ya, two pieces of bread and some mayo or miracle whip and some salt... mmmmmmm. you can always go online to find recipes or look at a cook book i just bought one today in fact and i have a couple you can wrote me and i can give you some if you seriously want to liven up your left overs...
