Saw and Saw II are both excellent choices. I have not seen Saw III yet, but I've heard from reliable sources that it's just as good as the first two, if not better.
The Exorcism of Emily Rose is "creepy" if you have a good imagination. The strange part is that this is the only movie that has ever freaked me out, and I love horror/gore/thriller/mystery type movies. There's a deeper, psychological scariness to this movie that typically isn't found in the movies churned out by Hollywood today.
Oh, and whatever you do, don't watch Slither, or Wolf Creek if you aren't a big fan of gore. They may be more or less mainstream movie, but they're still both on the gory side. Slither was an "ew, gross" kind of gore, while Wolf Creek was merely a "oh man, when is this movie going to end? That's gross, yet somehow boring at the same time" type of movie.
Boo was a slightly creepy, while not-so-interesting type of movie. It was never too popular, but it is a fun movie to watch late at night when you're home alone. Especially if you're just looking to see a few scary images as opposed to having to really think while watching the movie. Sometimes I feel that way... I just get too tired to watch something that fully absorbs my thoughts and takes a lot of brainpower to see the scariness in. Like I said, it's one of those movies that you would watch late at night, when you're tired, but you still want to watch a scary movie.
I would think back in time a little, and recommend some more, but those are the ones that I've watched recently (besides Wolf Creek). I just thought I'd mention those.

Hi. Based on your criteria stated, here are some titles that may peek your interest- up to you what you decide to go with.
Not too gory but quite effective in the genre;
Invasion of the body snatchers- both versions are good.
Freaks- this was shown last week on TCM underground; Tod Browning's classic that has real life side-show freaks.
The Haunting- 1963. This is considered the best in haunted house flicks, some may say that is debatable though.
Shivers- this may creep you out if you're alone, I recommend watching with some friends- may seem tame by today's standards, but still it works.

To me it would have to be "Alien" or "Physco".
"Physco" kicks *** until after the murders, then slows down a bit.
"Alien" is great after the Nostromo crew lands on the planet and all hell breaks loose. There are some scenes that may have you covering your eyes, and others that will make you jump right out of your chair :)

Its not put in the "horror movie" section, but it creeped me out- Event Horrizon. I don't know why, maybe because it was in space and dark...It was just wierd.
