"Being out of someone's league" is a reference to baseball. In professional baseball there exists a system called " Player Farming ". Each major league team has an affiliate team placed in many leagues of varying skill and expertise that they send players to for improvement. Sometimes it takes many years in these minor leagues to make it to the majors. The vast majority of these minor league players never make it to "The Show".

If someone has told you, you aren't in his league.... they are telling you he's a Big Leaguer at the "Show" and you're still fielding grounders in Po Dunk, Alabama. Get it!!???

it means your and his qualifications do not match.
NOTE: in case you're curious how the term is related to my answer above, think of football leagues: there's junior league, college league, professional league... of course a junior league player can not seriously compete with a professional player.
thats why when people say "he's out of your league" they mean "he is not for you"

It means he is in another category of people from you altogether, but it is usually used to mean that he's too good for you.
