You don't test the inside of the turkey, you put a meat thermometer in the thickest part of the thigh. Make sure you don't pierce the cavity or have the end of the thermometer come back out of the turkey. It should register 165 to 170. Then take it out of the oven and let it rest for 20 minutes before you start removing the stuffing and prepare to carve.

The turkey should be 160, trust me I cook turkeys every other day at work.. I usually take the turkey out when it reads 150, then let it sit covered for 20 minutes and this will bring it up to temperature. The only problem with doing that home is the skin doesn"t come out as crispy. But the proper temperature for turkey or chicken is 160.

According to my meat thermometer 170. Or just buy a turkey that has one of the automatic red buttons that pop up when its done.
