When you drive off air is pushed through the radiator and past the engine cooling it, when stopped this does not occur hence the increase in temo.

a little variance is normal.
IF it's alot your thermostat is stuck open
or it's out, but not if it's going up to middle.
Where are you Alaska ?

that would be when your fan kicks on to cool it down, its normal to do that in some cars as long as it doesn't over heat u are fine
