Everyone on your list is jewish, yes. Maybe not every guest actor or bit part player that ever appeared on the show, but everyone you named in your post is most definitely jewish.
I'm pretty sure the character known as "Newman", played by the actor Wayne Knight, is also jewish.
Julia Dreyfus is MOST definitely jewish as is Michael Richards, I have no idea why anyone would say they are not. Dreyfus is one of the wealthiest families in the world and everyone knows she is a jew.

I don't recall his publicist ever saying that he is Jewish, as far as I know he was raised Catholic, as you said. I think that people presume that he's Jewish because he played a character (Kramer) who seemed to be Jewish and because some of his features, such as his prominent nose and dark curly hair, are stereotyped as Jewish traits.

Julia Louis Dreyfuss may not consider herself Jewish but she is of Jewish heritage on her paternal grandfather side of the family.
