This should be done by an experienced carpenter or it could turn into your worst nightmare if not done correctly.

This is as simple as pie first when you hang your new drywall start with your ceiling first.
Next hang your sheet closest to the floor, leaving about a half an inch at the bottom from the floor, a broken piece of drywall is great for this.
Now measure your upper sheat and find out how much you need to rip off to make it fit and cut it appropriattely.

As for the actual mudding you will need 3 different drywall blades a 3" taping knife a 6" taping knife and a 10" taping knife start with the 3"

Place a 1/8 or so layer of drywall mud along your tape seams and then apply your drywall tape onto this by pressing it in place with the 3" knife.
ALLOW THIS TO DRY AFTER YOU SET YOUR TAPE IN PLACE.
then add your mud 1/8 or so thick at a time along all the taped seams with the 3" knife again to hide the tape. ALLOW THAT TO DRY
ONCE THIS IS DONE SAND DOWN ANY HIGH SPOTS REMEMBERING NOT TO EXPOSE THE TAPE(but if you do don't freak remember its just mud you can always ad more)
after that you'll pretty much have the hang of it so have fun.

Plastering is very difficult. That is a job for a pro. Drywall is way easier.
