I say that every prefecture and region has something that they are famous for. For example if you go to Kobe, you will hear about Kobe beef and yakiniku. If you go to Osaka you can hear about how Osaka takoyaki is the best in all Japan. In Tokyo's Tsukiji area, you will see and hear about how they have the best sashimi and sushi. The list goes on and on.
Besides dishes, regons have some type of fruit or food that is famous for that region, potatoes from Hokkaido, Fuji apples, Mito plumbs, and so forth. It is a quite the fun experience visiting someplace and seeing the area's calim to fame items of sale at the shinkansen stations or airports.

My best experience was the okonomiyaki in Hiroshima. Take a trip to the Okonimiyaki Village mall area and be delighted to some really good food. Plus, in Hiroshima, they cook the okonoiyaki for you, in front of you.

Fugu ? Puffer fish as it's otherwise known is the first one that springs to mind. If you'd said drink I'd have said Saki maybe. The puffer fish is a very particular and hazardous delicacy requiring a license to cook and serve in a restauraunt as it's um, poisonous when not quite cut correctly.

I like the yakisoba, taco rice, and the fried squid. I lived in Okinawa for 8 years and these are my favorites, and of course SUSHI!!
