You must be a city boy.
Bandanas were cheap and used to keep the dust out of your nose and mouth while you were herding cows. Every cowboy had one although it might not be red.
Law abiding cowboys did not form gangs. Their loyalty lay mostly with the outfit they rode for (that's the ranch).
Sometimes out of work cowboys would get together and decide to mark some mavericks (those are unowned cattle). Later when mavericks got scarce, they started rustling (stealing) cows from a ranch. Rustling was a hanging offence.
The few gangs that got formed were all outlaws. The Wild Bunch and the James-Younger Gang were the best known. Butch Cassidy's Wild Bunch robbed trains. The James-Younger Gang robbed banks until a bunch of citizens at their last town grabbed their rifles and ambushed them as they were coming out of the bank.
The average cowboy worked hard and played hard, but was not an outlaw or gang member.

A "cowboy," meaning a cattle ranch hand, was anything but a gangster. They were the opposite of today's dancehall image of swaggering oaf, because after all the work was dangerous, in a dangerous area ( wilds with critters ) and required cooperation, and almost everybody was routinely armed. There was a lot of courtesy and respect for each other.
There were gangs of robbers, of course, who were not working cowboys.
The "costumes" were pretty uniform, they worked in that environment. Bandannas were functional, not imagery.
Go read history, quit watching old movies.....

No, "Cowboys" wasn't a choice it was the way of life and the bandannas were to cover their mouth from the dust storms and the dirt that rose by the cattle not always to cover their faces so they could rob a bank.

No. The vast majority were just common day laborers who earned a very low salary to watch over cattle, which are among some of the dumbest animals. Not really a very glamorous job.

What is a cowboy?
If you're talking about the men that drove cattle. they were not gangsters.
If you're talking about any man in the old West that rode a horse, then some of them formed gangs and preyed on others.
Some were lawmen who killed and imprisioned the gangsters.
