I'm a civil engineer and jobs for civil engineers are always in demand. You tend to make less money than other engineers because a lot of the jobs are in the public sector or are doing work for the public sector on government projects, but the work is steady. A P.E. license is very important in terms of career advancement and earning power.

My wife has a degree in electrical engineering. P.E. is not so important there. She made a lot more money than me starting out, but a some folks she worked with got laid off from time to time when the economy was bad.

Chemicals make a lot, but I personally wouldn't like the work environment. I imagine software and electricals are probably growing the fastest. That's not my ball of wax though and I would never have liked that path. You really have to consider the type of work you like and the working environment you desire.
